Maison Rullier & Le local du BoCal, 30 rue Célestin Freppaz 73700 Séez

Pasta comes in many different styles: twists, tubes, slices... In the Savoie, we have our own special pasta shape: little flat squares of pasta called crozets. Why squares? Nobody can agree on this. Some argue that leftover lasagne was cut into small squares, thus giving birth to this Savoie speciality. Others claim that the dough used to be flattened into a roll, then sliced with a chopping knife. But nobody knows for sure. If you want to gain insight into this mystery, you can visit a local pasta factory. After that, you will know everything there is to know about crozets.
