The white endive is cultivated along the city walls and has been a speciality of Bergamo city since the past.
The leaves of this lettuce variety are white due to a particular natural treatment: the heads are tied to prevent the leaves from photosynthesising in the sunlight and are grown in darkness.
With the aim of adding value to the area and its features, Bergamo’s Colli Park produces the esteemed endive, giving it a seal of approval with the emblem of a hedgehog, also the park's emblem and symbol of excellence for the local produce.
