No trace is left of the artificial lake that used to bring water to the gardens and fountains of the Andrea Doria palace. After being covered with ground, Lagaccio (a pejorative version of the Italian word for lake) identifies the borough that hosted the lake, as well as being the name of a cookie. It was in this area that a little bakery gave birth to the treats, simple and with few ingredients, but with a long shelf-life, perfect for ships. Who knows if, upon meditating on the sweet water of the lake, the baker thought about adding a bit of butter and lots of sugar to the traditional melba toast recipe?
