The ruins making up the farm of S'Imbalconadu tell the story of a villa used as a country house in the Roman Ages. Consisting of a central structure surrounded by spaces used as warehouses, excavations have unearthed basins used for the production of wine – which was then stored in amphorae – as well as tools for the processing of cereals. Therefore, even during the Roman Republic the produce made included the same ingredients of Olbia’s typical dishes today: the culurgiones, the fregola, the malloreddus garnished with vegetables or fish sauces, not to mention the Cannonau, Vermentino, and Vernaccia wines. From the height of his house’s terrace, the landlord supervised the farming activity, perhaps munching on some pane carasau bread and pecorino.
