“As beautiful as a cassata”, they say in Palermo. And never before has a compliment been so spot-on. Has its name derived from the Arab quasàt or the Latin caseum? Its etymology is of little importance, as today it still remains the Sicilian excellency in terms of desserts: sheep ricotta, sponge bread, almond paste, and candied fruit come together in a work of art that is the symbol and tale of the culture, the soul, and the dreams of a community, making it rightfully enter the list of traditional Italian food products (P.A.T.). The colored wheel embeds the entire island and is a delight for the sight and palate; an image of pleasure in its multi-faceted uniqueness. Initially it belonged to the culinary tradition of the Sicilian nuns, considered so holy that it could only be made on Easter day!
