Exactly like the “regulars” in bars and restaurants that create their favorite dish combination or always order the same cocktail, even the composer has earned a pizza bearing his very name.
The artist, portrayed in a sculpture in the courtyard of the State conservatory, was crazy for eggs, and he composed a truly unique pizza topping. Seated at a pizzeria just as he is in statue form, when the pizza came out of the oven he asked to add mayonnaise and slices of hard-boiled egg over the traditional Margherita.
Pizza Rossini is the town’s pizza, cannot be found outside of Pesaro, and is a variant that you ether love or hate: which slice are you on?
