Carciofi alla giudia (Jewish-style artichokes) is the symbolic dish of the Jewish Ghetto, part of the Sant’Angelo neighborhood. Like all traditional recipes, this dish encloses the history of the people who created it, and features the queen of the Lazio region’s countryside. The mammole, typical round, thornless, Roman artichokes, were fried by the women living in the Jewish quarter and served for dinner after the 25-hour fast imposed by the Yom Kippur, the religious feast dedicated to atonement for sins. Simple to prepare, with a refined taste and easily distinguished by the fact they are served up-side-down and with their head squashed, the carciofi alla giudia are on every menu in the restaurants of the area.
