If Syracuse were a perfume, it would certainly be the scent of the citrus fruit, and especially the lemons, which are cultivated across a 13,000-plus acre area and grow spontaneously in the Mediterranean scrub surrounding the town.
The IGP (protected geographical indication) Syracuse Lemon also adds a special taste to a number of the city’s traditional recipes: as well as being the main ingredient of the extremely famous granitas, it is also used in starters, main dishes, and desserts.
